Easy Veggie Pizza!

 Why is this a Foodgasm? The sweetness of fresh sauteed vegetables makes love to the creamy ricotta topped with slightly browned mozzarella all atop a crispy crust– this seems so indulgent, but it’s not! All these amazing textures and flavors will make your taste buds explode with enjoyment. Yes veggies can be a part of a foodgasm- you’ll see!

This is an 8 point foodgasm!

What you need:
1 whole wheat pita
1/2 red bell pepper (sliced)
1/2 yellow bell pepper (sliced)
1/2 cup fresh spinach
1/3 cup sliced zucchini
2 tbsp fresh ricotta
1/4 cup part skim mozzarella cheese
1 tsp EVOO
salt and pepper to taste

Preheat oven to 415 degrees. In a medium frying pan on medium heat add EVOO and all all cut vegetables. Saute until vegetables are tender. Place pita on baking pan and smother vegetables on top of the pita.  Add 2 tbsp of the fresh ricotta on top of the veggies and flatten it to cover as much of the surface as possible.  Sprinkle on the mozzarella and put ‘er in the oven.  Only about 20 mins or until cheese is a happy golden brown.
