How to Make Breakfast Tacos #ATX

On our recent trip to Austin I feel in love with a local treasure, the breakfast taco! Yes everything you love about tacos, but with breakfast foods! 

Austin, Texas… or the Brooklyn of Texas. But as I learned, nothing can really be Brooklyn. It’s more referred to that since there is a high hipster quotient. But there is a lot more to Austin that hipsters. It is a free thinking area surrounded by the rest of Texans that is far far more conservative.

A couple things I noticed… cowboy hats and boots. They are NOT just for fashion. The hats- it’s because the sun REALLY beats down on you there, even in he end of September. The boots- well it’s because Texas is dusty, it’s very dry and the ground is dry, so that makes for not as much dirt as dust. (PS- I also learned a real pair of cowboy boots is SUPER expensive, like $600).

Now for what you are REALLY wondering about, like I was. The beer and food.  It’s important to mention that as I travel I find it super fascinating how climate and location influence food!

The Beer

Well guys I drank a lot more pilseners and lagers than I have in QUITE a while. Why? Well pilseners and lagers drink super easy and aren’t too high in alcohol. Without too powerful a flavor or too much alcohol it’s staying hydrated, but more fun. So the heat, well they are LOVING those drinking the shit outta those pileners and lagers.  

The Food

Texas is super close to Mexico, so Mexican food and restaurants make up for about 60% of what I saw down there. So I knew going down there I needed to get a breakfast taco and migas!

But let’s talk breakfast taco, shall we?

A taco for breakfast? Hell yeah, it’s like American breakfast and Mexican food had a sexy baby. I first experienced them at Torchy’s Tacos, a well know taco franchise down in Austin. I loved them, but I knew there were a couple modifications I could make. 

Like the corn tortilla, and I liked the scrambled eggs but they didn’t stay in the taco well. So in my version I made the eggs omolet style and cut them into little egg wedges to add to the tacos.

You can make these breakfast tacos 2 ways vegetarian or meatatarian. Just brown some crumbled chorizo for a nice meaty surprise! 

I also use Greek yogurt in place of sour cream, it tastes just as good with less fat and more protein.

My Breakfast Taco

Breakfast Tacos

Ingredients
  1. 4 eggs, beaten
  2. salt and pepper to tatse
  3. 4 corn tortillas
  4. 1 cups mexican shredded cheese blend
Toppings
  1. crumbled chorizo (optional)
  2. pico de gallo or salsa fresca
  3. 2% fat Greek Yogurt
  4. fresh cilantro
  5. avocando, sliced
Instructions
  1. Preheat oven to 415ยบ
  2. Place Corn tortillas on a cookie sheet and cover in shredded cheese, bake for about 5-8 minutes (until cheese is nice and melty)
  3. While Tortillas are in the oven cook the eggs in a nonstick frying pan, do not scramble, keep in one piece and flip. (It will make them easier to eat in the taco)
  4. Cut egg into 4 sections
  5. Once cheese is melted on, add the egg and other toppings desires.

  1. I bought Trader Joe's Salsa Fresca- I ain't got time for that! LOL!
