Pineapple Upside-Down Pancakes
This is by far the best pancake recipe I have ever tried, with the addition of caramelized pineapple and Homemade Pineapple Malibu syrup you will have yourself a foodgasm!
I have been on a roll with pineapple recipes, I guess you could say I’m obsessed. Sometimes you are inspired by recipes you see and sometimes you become obsessed and carried away with an ingredient. It’s kinda like when you have a new favorite song or album and you listen to it over and over and over until you cannot listen to it again…. (well maybe a year later). That is what I did with Lady Gaga’s first album, and now I cannot hear “Poker Face” even one more time…
So instead of “Poker Face” it’s pineapple, even more specifically caramelized pineapple! I mean pineapple is totoally amamzingly delicious on it’s own, but when you caramelize it – like magic it’s sweeter and totally reduces the acidity. So you are left with the BEST part of the pineapple- the flavor and sweetness and the caramelized sugar on the outside. It is the bees knees or even the cat’s ass (whatever you prefer)!
TO make these PERFECT fluffy pineapple pancakes to the next motha fuckin level I drizzled them with some homemade pineapple malibu syrup. I guess I have a pineapple and coconut problem huh? Be that as it may these pancakes were sooooo good I could eat the leftovers straight outta the fridge.
So it’s Father’s Day and I do believe Daddy would LOVE these pancakes! Swoon for them…. in a manly way of course! To make it more many serve them for with a beer. You can have a Daddy beer brunch! This would pair nicely with a Lemon Shandy, Schofferhofer Grapefruit Hefeweizen, Great South Bay’s Blood Orange Pale Ale or even Bluepoint’s Blueberry Ale!
In fact I think Beer Brunches should be a daddy thing going forward! In fact this post reminds me that I need to get on my Father’s Day plans STAT!
Anyways this is how you make this deliciousness for yourself and your daddy, because he has done so much for you!
Enjoy in moderation if you are taking part in the weight loss challenge like I am! But this is worth the carbs!! So have some and take a run after!
What You Need
Pancakes
1 1/4 cup flour
1 teaspoon baking powder
1 teaspoon Baking soda
pinch of salt
1 egg, beaten
1 1/4 cup lowfat buttermilk
2 tablespoon coconut oil, melted
1/4 c. sugar
1/2 teaspoon vanilla extract

Caramelized Pineapple
2 cups pineapple chunks (fresh)
1 tablespoon coconut oil
Pineapple Malibu Syrup
1/4 cup malibu
3/4 cup water
2 cups sugar (I used Trader Joe’s Organic Cane Sugar)
1 cup pineapple chunks
How to make it
1- First let’s caramelize the pineapple! In a non stick frying pan or skillet on medium heat melt the coconut oil. (This also happens to give it some flava!)
2- Once the pan has heated up and the coconut oil had melted add in the pineapple and cook on medium heat for about 5 minutes on each side.
3- Let’s make the batter– mix together all the dry ingredients first: the flour, sugar, baking powder, baking soda and salt.
4- Melt 2 tbsp coconut oil and add the dry ingredients as well as your lowfat buttermilk, eggs, and vanilla extract.
5- To make the pancakes in a non stick frying pan on medium-low heat (make sure you warm up the pan first) pour in some batter and then carefully place some pineapple chunks down inside the poured batter. (I put the in the shape on sun rays or a flower)
6- cook on that side until air bubbles form and stay open, that’s how you know they are ready to flip. Flip carefully and cook on the other side for a minute or two.
7- While the pancakes are all cooking one bye one, add all the ingredients into a medium saucepan on medium high heat, when it starts to simmer and boil reduce to medium/low. Let it simmer up to another 10 minutes.
8- Add to food processor to break down pineapple chunks.
9- Serve pancaked with a little butter on top on each and top each stack with desired amount of syrup.
Then enjoy- have a beer and relax with your Dad!
